Low Carb Gingerbread Cookies

INGREDIENTS

  • 11/2 Cup Almond Flour
  • 3 Tbsp Erythritol
  • 3 Tbsp Softened Butter
  • 1 Egg White
  • 1/2 Tsp Baking Powder
  • 1/2 Tsp Cinnamon
  • 1/2 Tsp Xanthan Gum
  • 1 Large Egg
  • 1/2 Tsp Ground Ginger
  • 20 Drops OOOFlavors Gingerbread Cookies

Royal Icing:

  • 11/2 Powered Sweetener
  • 1 Egg White
  • 1/2 Lemon Juice 

DIRECTIONS

  1. Preheat oven at 350˚F and start prepping mixture.
  2. In a small bowl, mix all ingredients until a dough texture.
  3. Wrap the dough and let it chill for 30 minutes before using.
  4. Spread the dough between 2 sheets of baking paper and cut into cookies.
  5. Bake for 12-15 minutes and prep icing for cookies.
  6. Once cookies are baked/cool, mix icing ingredients, and start icing cookies!
