Cornbread Muffins with Honey Butter Glaze.

Ingredients: For the muffins:

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil
  • 1/4 cup unsalted butter, melted and cooled
  • 15-20 Drops corn bread flavor concentrate
  • 1 egg
  • 1 cup whole milk

For the glaze:

  • 1/4 cup unsalted butter, melted
  • 1/4 cup honey
  • 1/2 teaspoon corn bread flavor concentrate

Instructions:

  1. Preheat oven to 375°F. Line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the oil, melted butter, corn bread flavor concentrate, egg, and milk.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Spoon the batter into the prepared muffin tin, filling each muffin cup about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  7. While the muffins are baking, prepare the glaze. In a small bowl, whisk together the melted butter, honey, and corn bread flavor concentrate until smooth.
  8. Remove the muffins from the oven and let them cool for a few minutes. Then, brush the honey butter glaze over the tops of the muffins while they're still warm.
  9. Serve the muffins warm or at room temperature.
